Any help on the following would be appreciated:

Regular, on the rims, brakes have a fine tuning adjustment with a small twist on a part of the cable wire. Easy to widen/tighten the brakes. Rubbing? You can widen a bit. Too wide...you can tighten down.

Do hydraulic disc brakes, in this case Shimano, have something similar?

Anybody have any experience getting carbon fiber repaired locally?

I'm told by my LBS that he doesn't think its structural damage (rear derailleur hanger blew up and RD went into the cassette and gashed the drive-side rear triangle in a bunch of places) but I'd like the option of taking it for a second opinion.

The Peekskill Brewery is a popular spot to end a ride - the beer's good, and so's the food, but the customer service has always been mediocre.  Yesterday it was awful.
