Believe it or not get her some racing videos and sit on the couch during your down time and watch how the pros look on their bikes while riding in a pack,sprinting or dancing on the pedals going up the hills plus you'll be entertained as Phil Ligget and Paul Sherwen get it wrong again not to mention you get to see Gary Imlach and his over sized shirts.Seriously though over the years I have learned just by watching videos of races.
All fine teachers I'm sure.
Here's a guy who is THE BEST rider I know. Felix can handle a bike as if it's part of him and he is an expert fitter and all around cyclist. Very patient too -

The guy you want is Scott Willingham. He leads all kinds of Bike workshops and does motor skills stuff with people so he'd be an expert on teaching folks how to ride a bike for the first time.
