Weschester Biking Map and Van Cortland Trails
I don't know if a NYC style bike route map exists for Westchester County. What does exist are Hagstrom maps for upper and lower WC. Look for secondary roads, scout them out. Or look at cue sheets in our NYCC Ride Library under Westchester/CT and see where the routes are on the maps. Connect these roads to cobble together a route to where you want to go.
As to trails of VC Park. Have you searched the web?
Westchester County Parks has some maps of bike and hiking trails on their website in pdf format. I'm not sure if this is what your looking for.

You can ignore the 1st 8 lines. That's a workaround for wimps who won't ride the unpaved section through VCP, which is IMO one of the most beautiful parts of the trail.
If you don't mind a little mud: from 242/Bway, instead of going north on Bway as per the cue sheet, go east on the path into VCP, then under the bridge (actually part of the rail ROW), then you will be by the golf clubhouse. (If you get lost, ask directions to the clubhouse.) To the left (west) of the clubhouse front entrance is the south end of the unpaved part of the trail. Go north on this about 1-1/2 miles to the Yonkers border and the paving starts.

Late last year I was investigating the Westchester bike trail, and I had been frustrated by the paucity of precise maps. So, I drove up to what I thought was the trailhead, and kept biking north until it ended. Then on a later date, I started biking at the northern trailhead and rode all the way back to New York City. The trail is almost, but not quite, contiguous as you go from the top to the bottom of Westchester. There are red marks on the map indicating breaks in the trail. If there is interest I will update the map to include the southern stub of the trail, which begins at the northern end of Van Cortland park and ends at Redmond Park in Yonkers about 2 miles later.

The line on the map indicates the bike path, and it is quite accurate. It is generated from a GPS recording of my bike ride. You will see, if you zoom in enough while you follow along, a few places where I missed turns. Oops! The northern break (with the red mark) contains a terse description of how to get back on the trail again if you're riding south.
Note that this loads in 10 or 15 seconds on a 2 GHz PC laptop, but unfortunately it has been trying to load for the past couple of minutes on my dual G5 mac. So if you have a Mac you may not be able to load the map.
