Any suggestions for a good wheel builder (local or otherwise) for a set of fixie wheels?

Yourself. No dish, so it's a simple, simple build. Perfect opportunity to learn to build some wheel.
Otherwise, the boys at Bike Works have a good reputation, though all the times I've been there, I've never actually seen Dave be the one lacing the wheels.
But really, a set of fixie wheels? Anyone (and certainly anyone who works in a bike shop) could lace up and tension a set of those.
You can, of course, borrow my copy of the book, and a truing stand.

I have had all three of them build wheels for me. One fixed and 2 singlespeed and have never had problems.
